With a fork, prick the sweet potatoes. On a microwave-safe plate, microwave each potato on high for 4 minutes until soft and easily pierced with a knife.
Scoop out the pulp into a microwave safe bowl and mash. Add the yogurt, orange juice and maple syrup and stir until combined.
Microwave again for 1-2 minutes until heated through. Season with salt and pepper to taste. Serve with a dollop of additional yogurt if desired.
