Mexican Street Corn Salsa

This version of Mexican Street Corn Salsa is so delicious, you'd be shocked how quick and easy it is to make! You won't believe the time-saving ingredient!

Servings: 3 cups
  • 1 14.75 oz can Del Monte fire roasted corn
  • 1 jalapeƱo, diced remove seeds and ribs for a milder flavor
  • 1 t chili powder
  • 3 T fresh cilantro
  • 2 T lime zest
  • 1 t lime juice
  • 3 T mayonaisse
  • 1/2 t salt
  • 1/8 t pepper
  • 2 oz queso fresco (you can substitute cotija or feta)
  1. Mix all ingredients together adding the queso fresco cheese last. Serve over a grilled or pan-fried avocado, over Chili Lime chicken or with tortilla chips.
