Carpool Apple Betty is a dish that has been in our family for a long time and is always a favorite. It's a delicious dessert with or without a scoop of vanilla ice cream, a breakfast treat and even a side dish with holiday ham!

  • 6-8 apples, peeled, cored and sliced
  • 1/4 c apple juice
  • 1 c oatmeal (old fashioned or quick will work)
  • 3/4 c flour
  • 1 c brown sugar
  • 1 stick butter
  • 2 t cinnamon
  • 1/4 t nutmeg
  1. Preheat the oven to 350. Place sliced apples in a baking dish so that the bottom of the dish is covered. Pour apple juice over the apples so that there is a very thin layer of juice on the bottom of the pan. 

  2. In a mixing bowl, stir together the oatmeal, flour and brown sugar. Add the cinnamon and nutmeg. Using a pastry cutter, cut the butter into the dry ingredients until the mixture has a crumb-like texture. 

  3. Spread the mixture evenly over the apples so that the apples are covered.  Bake for 35-40 minutes or until lightly browned and the apples are tender.
