Cook pasta per package instructions in salted boiling water. Reserve 2 cups of the pasta water.
Meanwhile, in a large skillet, heat 2 T of olive oil and cook tomatoes and shallot, for 5 minutes. Add dried basil and S&P to taste. Add garlic and cook 2 more minutes.
Add pine nuts, chicken, pesto, S&P to taste and 3/4 c of the pasta water. Stir together and add the pasta. Stir until well combined. Add additional water 1/4 c at a time until desired consistency is reached.
Place mixture in a serving bowl and cool slightly. Add mozzarella and garnish with fresh basil, if desired.
Homemade pesto is great in this dish, but store-bought also works well in a pinch!
