Who is hosting Easter this year? If you are playing hostess and are at a loss for what to make for dessert, I have the solution for you! These Mini Funfetti Cheesecakes are easy, fun and are super adorable.

The Funfetti part is completely optional but makes the little cheesecakes extra festive. I have also made them Easter-y by adding food coloring to some of the batter to make them pastel colors. Or you can add a little bunny Peep face – just cut off it’s head and slice it in half to make it thinner (that doesn’t sound like a wholesome Easter activity, but bear with me). My favorite way to make these more seasonal is to macerate some strawberries and pile them on top.

You can make Mini Funfetti Cheesecakes even fancier by making a little graham cracker crust and pressing it into the little muffin cups, or you can save time and use a Nilla Wafer. And you can use those extra Nilla Wafers to bribe your kids to eat their dinners. Not that this is what I do or anything………..ok fine I do.

Servings: 16 cheesecakes
  • 2 pkg Philadelphia cream cheese, softened
  • 3/4 c sugar
  • 2 eggs
  • 1 T lemon juice
  • 1 t vanilla extract
  • 16 vanilla wafers
  • 1/2 c chopped strawberries
  • 2 T sugar
  • 3 T seasonal sprinkles (Optional)
  1. Preheat oven to 375. Beat cream cheese, sugar, eggs, lemon juice and vanilla together until fluffy. Stir in the sprinkles.

  2. Line muffin pan with cupcake liners and place a vanilla wafer in the bottom of each. Fill each cup 2/3 full with the cream cheese mixture. Bake for 15-20 minutes. 

  3. While the cheesecakes bake, top the strawberries with the 2T sugar and stir. Stir occasionally. Once the cheesecakes cool, top with about a tablespoon of the strawberries and chill. For best results, top the cheesecakes just before serving.
