Pink Pineapple Fluff
Growing up as a tomboy, I always felt personally offended by the color pink. Anything princess was so uninteresting to me, and don’t even get me started on Barbie. For birthdays I wanted Ninja Turtle action figures and baseball gear. To my parents’ credit, they never forced girly activities or clothing on me and let me be the tomboy I wanted to be. My guess is that it was because I was the 4th kid and they didn’t have the energy to fight with me about it. The irony here is that I have a house that is dripping with the color pink, and two princess loving, tutu wearing girly girls. What’s my point? The only pink item I tolerated in my youth was this Pink Pineapple Fluff.
I almost forgot about this dessert/salad until it was served at my girly girl baby shower. All of my friends went crazy for the Pink Pineapple Fluff and it came dancing back into my life. I think this recipe originated with my Aunt Anne and has been a staple at family reunions and tee-ball potlucks for as long as I can remember. We think it should be a staple in your house too.
Now that my Pink Pineapple Fluff is chilling in the fridge, I’m off to play dress-up, read every book about princesses we can get our hands on and organize a dance party. The irony of my life is not lost on this former tomboy. If you, too, have little girls, they will love this Pink Pineapple Fluff (or as we call it, Princess Salad). But your boys and tomboys will love it too. Maybe even serve it up with some Double-Decker Knox Blox. You’ll be the hit of the tee-ball potluck!
Pink Pineapple Fluff is a delicious and light dessert salad that requires 15 minutes and 4 ingredients. My favorite kind of dessert!
- 3 oz strawberry jell-o
- 1 can crushed pineapple in juice (strain the pineapple juice and reserve)
- 12 oz small curd cottage cheese
- 1 sm pgk cool whip
In a small pot, combine 1/2 c pineapple juice and Jell-O package. Heat until boiling and remove from heat. Allow to cool.
Combine the cooled Jell-O, pineapple, cottage cheese and cool whip and stir well. Chill and serve.
