Cheesy Baked Grits and a Brunch Menu
I don’t know about you, but pretty much the only meal I care about lately is brunch. After making and planning so many holiday dinners, all I want for dinner is leftovers or takeout, and the only time I have energy to actually cook is in the morning or afternoon. Lucky for you, we’ve been posting some brunch ideas for several weeks now which will allow you to either plan a big brunch menu, or pick and choose a couple of ideas for a substantial breakfast for just a few. The final recipe we have to add into the mix is our Cheesy Baked Grits.
Over the past few weeks, we have brought you some breakfast/brunch hits such as Philadelphia Sticky Buns, Winter Fruit Cups and who can forget our fan favorite, Reuben Brunch Casserole? Add in a spill of champagne and OJ and you’ve got yourself a spread fit for a party.
If you’re looking for a pretty incredible brunch side dish, these Cheesy Baked Grits are it. Did I mention that they are super easy? No? Oh, well they are super easy. You can whip these up and have them in the oven while you make the rest of your brunch, and they might just steal the show.
Cheesy Baked Grits might be the star of your brunch spread. They are hearty yet simple and oh, so delicious. Who doesn’t love cheese and grits??
- 4 1/3 c water
- 1/2 t salt
- 1 1/4 c quick cooking grits
- 1/4 c butter
- 6 oz shredded cheddar cheese
- 1/4 t salt
- 1/4 t pepper
- 3 eggs, beaten
- 5 oz shredded Swiss cheese
Bring water with 1/2 t salt to a boil in a heavy sauce pan. Gradually stir in grits and return to a boil. Cover, reduce heat and simmer, stirring occasionally, for about 5 minutes or until done.
Remove from heat and stir in butter, 1 1/4cheddar cheese (reserving 1/4 c), salt and pepper. Cool for 15 minutes and stir in the eggs.
Pour half of the grits into a slightly greased 12×8 baking dish. Sprinkle with Swiss cheese and pour the rest of the grits over top. Sprinkle with remaining cheddar cheese. Cover and bake at 350 for about 50 minutes until set.
Uncover and sprinkle the remaining 1/4 c cheddar cheese on top. Bake uncovered for an additional 5 minutes.
