Toffee Grahams || Homemade in a Hurry

Sometimes the simplest recipes are the best. And it doesn’t get much simpler or better than these Toffee Grahams. When I was in high school I developed a borderline addiction to these little treasures and several of my friends did as well. It got so bad that I had to go cold turkey and stop making them which was not an easy thing to do. And after awhile I moved on to other desserts – currently can’t stop eating chocolate covered, peanut butter filled pretzels from Publix. My mom reminded me of these Toffee Grahams the other day and I had no idea that all this time, they were one of Granny’s Recipes!
The recipe itself is hardly a recipe. There are only 4 ingredients and the whole process takes about 15 minutes. The Toffee Grahams could not be more easy or delicious. That makes them a perfect Christmas Homemade in a Hurry.

- 18 Grahams Crackers (you can use cinnamon or honey graham crackers. Both are delicious)
- 1 c butter
- 1/2 c sugar
- 1/2 t cinnamon
- 1/2 c pecans (optional)

Preheat oven to 350. Place Graham Crackers in a sheet pan or jelly roll pan. Combine butter and sugar in a sauce pan and heat over medium-high heat and bring to a boil. Boil for 2 minutes and remove from heat and stir in the cinnamon.

Pour mixture slowly over the graham crackers and spread with a rubber spoon until evenly covered. Bake for 9-11 minutes. (The graham crackers will look slightly moist when they are done.)

Cool in the pan for 5 minutes until the graham crackers harden. Remove from sheet pan and place on a cooling rack. Store in an airtight container in layers separated with wax paper.
