Sweet Potato Salad with Andouille Sausage || A Taste of the Big Easy
If you need a big change and an easy weekend away from the little kids and the hard routine, might I suggest a trip to the Big Easy? Maddy and I spent the weekend in New Orleans (without the kids!) and absolutely fell in love with the food and the culture. We also fell in love with the idea of a two night getaway from the hard little tasks of everyday and the ease of traveling without sippy cups, strollers, and diapers. We were lucky enough to attend the International Food Bloggers Conference, and I want to share with you our biggest takeaways and an awesome recipe for Sweet Potato Salad with Andouille Sausage.
- Traveling without kids is so fun and easy. But, we missed those little ankle biters in a big way.
- The food in New Orleans will not be easily forgotten. The rich melting pot of cuisines was extremely inspiring, and we have big ideas to work some new flavor combos into our cooking (think tuna/bacon)
- The people of New Orleans have big personalities and easy conversations. We made friends at every restaurant. In the Big Easy, every meal was an event – not just food.
- The blogging community is a welcoming and encouraging group, and we feel big-time grateful to have met all of the people we were lucky enough to connect with at the International Food Bloggers Conference.
On Saturday, we had brunch at the Court of Two Sisters, which came highly recommended from friends (thank you, Lois and Katie!). With a name like that, how could we stay away? And with food like that, we will never forget our experience! We were still full from brunch when we finally had our fried alligator dinner later that night at 10pm. The giant buffet was jam packed with food from the Big Easy – Shrimp in Spicy Etouffee, Duck à l’ orange, Crawfish Louise, Creole Jambalaya, Southern BBQ Pork Ribs, and multiple salads. Even with all of the above, the one thing we could not stop raving about the Sweet Potato Salad with Andouille Sausage. And because we can’t leave well enough alone, a compliment led to a hug, and a picture with the chef. And before we knew it we left the restaurant named just for us with the recipe in our hot little hands. And the chef gave us permission to post it on our blog! Easy prep and big flavors. This sweet potato salad from a New Orleans restaruant, The Court of Two Sisters, has big flavors and easy prep. An awesome recipe from the Big Easy!
- 2 medium sweet potatoes, peeled and chopped into smallish chunks
- 1/4 lb andouille sausage, sliced into 1/4 inch rounds (I used 3 links of precooked and packaged Natures Promise brand)
- 2 T green onion, sliced
- 1/2 c dijon mustard
- 6 T red wine vinegar
- 2 T sugar
- 1 T honey
- 1/2 c olive oil
Bring a medium saucepan with enough water to cover the potatoes to a boil. Once the water is boiling, add the sweet potatoes and boil for 10-15 min depending on the size of your chunks. Remove to a strainer and run under cold water.
Saute the sausage slices until hot. Add to a mixing bowl with the sweet potatoes.
In another mixing bowl, add the mustard, red wine vinegar, sugar, and honey. Whisk well. Once mixed, slowly whisk in the olive oil until all is emulsified.
Pour the sauce mixture over the sweet potatoes and sausage. Do this slowly so you don't end up with more sauce in your salad than you like. We had a little leftover sauce. Stir the green onions into the salad and mix well.
Chill and serve cold. This side dish is much tastier after all of the flavors have had time to chill together for a while. Chilling is key!
The original recipe from the restaurant made way too much sauce so we adjusted the measurements. Be sure to taste and adjust to your liking before pouring over the sweet potatoes and sausage.
