Isn’t it sometimes hard to make a homemade dinner for your family every night? Coming up with recipes for a main dish and sides that compliment one another sometimes just does not happen. And ordering dinner gets expensive. Dinner has become such a source of stress and anxiety for so many people. But we refuse to give up!
Family dinner is so much work on the front end, but we know that sharing a meal at the end of the day has lasting positive effects. So we soldier through. In this section of our blog we are going to share some of our go-to recipes for the weeknights that are crowd pleasers, but are quick with less clean-up. These recipes will either be low maintenance meals or recipe tricks to make your life a little easier. We hope you enjoy and if you have any quick recipes let us know! Easy Rustic Chicken Fettuccine
Easy Rustic Chicken Fettuccine is a quick, 25-minute meal that I started throwing together several months ago. It was inspired by a Caprese Pasta recipe I saw in Southern Living, but I made many changes including using Granny’s Pesto from her Pesto Pasta Salad. My husband requests this quick dish again and again!
Easy Rustic Chicken Fettuccine has become a go-to weeknight meal in this house. It is so fast and easy to toss together. You'll want to make it every week!
- 10 oz fettuccine
- 1.5 c reserved pasta water
- 1 rotisserie chicken, shredded
- 3 c cherry tomatoes, halved
- 3 T shallot, small diced
- 3 cloves garlic, minced
- 4-6 oz Granny's Pesto See link in the Post Text
- 2 T pine nuts, toasted
- 4 oz mozzarella cheese
- 3 T olive oil
- Salt and Pepper to Taste
- Basil, dired and fresh (1 t dried, 2T fresh)
Cook pasta per package instructions in salted boiling water. Reserve 2 cups of the pasta water.
Meanwhile, in a large skillet, heat 2 T of olive oil and cook tomatoes and shallot, for 5 minutes. Add dried basil and S&P to taste. Add garlic and cook 2 more minutes.
Add pine nuts, chicken, pesto, S&P to taste and 3/4 c of the pasta water. Stir together and add the pasta. Stir until well combined. Add additional water 1/4 c at a time until desired consistency is reached.
Place mixture in a serving bowl and cool slightly. Add mozzarella and garnish with fresh basil, if desired.
Homemade pesto is great in this dish, but store-bought also works well in a pinch!
