Peanut Butter S’mores Bars

August always has everyone asking for s’more; S’more days off from school, s’more time staying up late before bedtime and probably s’more screen time to escape the heat. If you make this recipe, I can promise your whole family will be asking for s’more Peanut Butter S’mores Bars.

My version of Peanut Butter S’mores Bars are the product of a happy accident. I was so excited to make Granny’s s’mores bars and when I finally made them, they were…well, terrible. S’more testing and tasting was needed.

Her recipe called for corn syrup which really turned me off.  So I substituted a sugar/water mixture, which did not go well. But I loved the idea of making S’mores with Golden Graham cereal. And Summer is the season for S’mores so I couldn’t let it go. I combined a classic peanut butter bar and classic s’mores for what I think might just be the absolutely perfect summer dessert. The recipe I came up with uses less added sugar and butter than other peanut butter bar recipes I’ve seen and has even more flavor. With end results like these, I’m hoping s’more happy accidents come from that big ole recipe box. Thanks for the inspiration, Granny!

  • 3 c Golden Grahams cereal, crushed finely
  • 1 c powdered sugar
  • 1/2 c butter, melted
  • 1 c creamy peanut butter
  • 1.5 c semi-sweet chocolate chips
  • 3 T creamy peanut butter (for topping)
  • 1/2 c Golden Grahams cereal crumbled
  • 3/4 c marshmallow fluff
  1. Crush 3 cups Golden Grahams in a food processor until the crumbs are fine. In a medium mixing bowl mix together the crushed cereal, powdered sugar, butter and peanut butter. Stir together well. 

  2. Press mixture into a foil-lined 8x8 pan. 

  3. In a microwave safe bowl, melt the chocolate chips and 3T peanut butter. Microwave for 30 seconds then stir. Microwave again for 30 seconds and stir until completely melted and smooth. If needed, add 15 more seconds. 

  4. Drizzle the chocolate/peanut butter mixture over the crust in the pan. Place pan in the refrigerator for at least 3 hours or ideally overnight. Once the chocolate layer is firm, spread the marshmallow fluff over the chocolate layer in a thin, even layer then sprinkle the crushed golden grahams cereal over top (this does not need to be crushed finely). 

  5. Chill the pan for another 30 - 60 minutes. These bars are best served chilled.
