Broccoli Carrot Slaw
Those stories of housewives before us who cooked and baked without recipes make me skeptical. Just a few handfuls of this, pour in some of that, moderate oven, simmer for a few hours -I’m just not sure I believe all that. I am impressed by these kitchen heroes. But I am so stressed when I put myself in their (house)shoes without a recipe to follow. However, Broccoli Carrot Slaw is my one and only dish that truly needs no recipe card, or “record,” as the housewives of yore would have called it.
Among Broccoli Carrot Slaw’s many delicious and flavorful attributes, is that you simply can’t mess it up. Use as much or as little of any ingredient you want. I started with a recipe from my wedding shower several years ago, but it has evolved quite a bit since then. And after making this many times, I have nailed down the ingredients, amounts and flavor combo for my taste buds. But go nuts, do what you want. Hey, there’s an idea – throw in some nuts! Next I’m going to try it on top of our Fully Loaded Hot Dogs!
My perfected rendition of Broccoli Carrot Slaw calls for broccoli, carrot, apple, purple onion, and Craisins. But I’ve also made it with all types of onions, no apples, dried apricots, crumbled bacon, water chestnuts, and crumbly cheeses. And every combo gets snarfed right up. So just go for it – use your hands instead of measuring cups. Dump in the last of the dried mango before it goes bad. And no matter what combo you end up with, with or without a “record,” you will feel like a kitchen superhero.
Anyone who tastes this easy, foolproof broccoli slaw will want your recipe. No one needs to know that no matter how you make it, it never fails!
- 1 large head broccoli
- 2 med-large carrots, peeled
- 1 apple, peeled
- 1/2 purple onion
- 2/3 c craisins
- 1/2 c +2T mayo
- 3/4 t salt
- 1/2 t pepper
- 1/2 t garlic
Finely chop broccoli, carrots, apple, and onion. I use a food processor to get the same effect. Mix all chopped ingredients and Craisins in a large bowl.
In a small bowl or measuring cup, mix mayo, salt, pepper, and garlic.
Pour the mayo mixture into the broccoli mixture and mix well. Do this little by little. Everyone likes different amounts of mayo so stop when you think enough is enough. Or add more than listed if you want it creamier. Taste and adjust seasonings. Chill for a while before serving.

crumbly or finely shredded cheese
any kind of onion works
dried apricots, or any fruit
