Tomatoes Vinaigrette

Granny's recipe for tomatoes vinaigrette is easy, delicious, and memorable. This simple summer side dish will have everyone asking for the recipe!
- 3 med-large juicy red tomatoes
- 4 T chopped fresh parsley
- 1 clove garlic, crushed
- 4 T olive oil
- 1.5 T apple cider vinegar
- 3/4 t salt
- 1 t dried basil
- a few pinches pepper

Cut tomatoes into medium slices. Place in a bowl and sprinkle with parsley. Mix together.

Mix together garlic, oil, vinegar, salt, basil, and pepper. Pour over tomatoes and parsley. Cover

Chill for 3-4 hours. Granny's recipe card says to chill for 3 hours or overnight. I tried them the next day and they were still very good, but for best and freshest results, I suggest serving them same day.
