Tomatoes Vinaigrette

If I had a nickel for everytime someone asked me for the perfect tomato salad recipe, I would have no nickels. Luckily, the ingredients for Granny’s Tomatoes Vinaigrette recipe won’t break the bank and the result is solid gold. This recipe is simple, easy, and memorable. Make this recipe for a cookout or picnic this summer, and mark my words, someone will ask for the recipe.

Tomatoes Vinaigrette is basically a marinated tomato salad. As is, the recipe is a perfect summer side dish. The marinade is packed with flavor. The chilling for 3-4 hours part makes the salad especially refreshing for warm weather. If you want to mix it up, you can chop and use it as bruschetta on some crusty bread. Or, If you want to beef it up a little, throw in some mozzarella cubes. Add some of this salad to scrambled eggs, and you’ve got yourself an omelette. I also plan to use it as a pizza topping. But again, none of this is necessary. Tomatoes Vinaigrette on its own is a real money maker.

After I sliced up the tomatoes, I put them in a large Mason jar, and poured in the vinaigrette. I loved this because it took up much less space in my fridge than a big bowl. And it was also more  convenient to go give it a shake every couple hours rather than a stir. Oh and it was a cinch to transport. Plus, it looked pretty.

Tomatoes Vinaigrette

Granny's recipe for tomatoes vinaigrette is easy, delicious, and memorable. This simple summer side dish will have everyone asking for the recipe!

  • 3 med-large juicy red tomatoes
  • 4 T chopped fresh parsley
  • 1 clove garlic, crushed
  • 4 T olive oil
  • 1.5 T apple cider vinegar
  • 3/4 t salt
  • 1 t dried basil
  • a few pinches pepper
  1. Cut tomatoes into medium slices. Place in a bowl and sprinkle with parsley. Mix together.

  2. Mix together garlic, oil, vinegar, salt, basil, and pepper. Pour over tomatoes and parsley. Cover

  3. Chill for 3-4 hours. Granny's recipe card says to chill for 3 hours or overnight. I tried them the next day and they were still very good, but for best and freshest results, I suggest serving them same day.

  4. Please note, I altered Granny's measurements slightly after making it a few times. My changes are reflected in this recipe card.
