Aunt Carla’s Frozen Fruit Pops
These Frozen Fruit Pops were a staple in our house growing up. The top shelf of our basement freezer almost always housed a tray of this concoction which we called Frozen Fruit Cups. After playing outside all day, these were all we wanted (well, these and Dunkaroos). Frozen fruit pops are not actually a creation of Granny, but of my Aunt Carla. Every summer, we would spend weeks in Philadelphia with Granny, and she knew how much we loved these so she very wisely acquired the recipe.
It is no coincidence that Aunt Carla is my Godmother, because to me, these frozen wonders are a godsend. During my first pregnancy I could eat almost nothing except 3-4 of them per day. Recently I was thumbing through the recipe box for some summery flavors and rediscovered this gem. I could not wait to make them again and share the recipe. This time, instead of putting the mixture into cups and freezing, I decided to try them as popsicles. My only regret is not making these as popsicles before.
Frozen Fruit Pops are packed with bananas, pineapples, strawberries and oranges and are so refreshing that they are a perfect treat on a hot day. But let’s not pigeonhole these little renaissance treats. They are sweet enough to have as a dessert, and if you don’t want to freeze them, we sometimes serve them with dinner as a fruit salad of sorts! There are no rules here. Also, last night I poured myself some Prosecco, tossed in a pop and found potentially the greatest combination of alcohol and frozen fruit out there. Please put your children to bed and try this.
Now that I have rediscovered these frozen fruit pops, I’ll be sure to have my freezer (and wine glass) stocked with them all Summer long. And when my kids go to visit their grandparents each summer in Pennsylvania and/or Massachusetts, I’ll make sure that they stock their freezer as well. And if my parents are reading this, feel free to interpret this as me inviting you to watch my kids for a few weeks each summer. Momma needs some alone time at the pool with a Frozen Fruit Prosecco cocktail in hand.
Aunt Carla's Frozen Fruit Pops are the perfect summer treat for any age. Everyone from toddlers to grown-ups will love the cool fruity flavors and refreshing feeling these pops deliver. For those over 21, stick one of these pops in a glass of Prosecco and you have the absolute best Summer beverage.
- 2 pkg frozen strawberries, thawed 20 oz total - do not use sugar free
- 12 oz frozen orange juice concentrate, thawed
- 2 cans crushed pineapple 20 oz
- 1 can mandarin oranges, drained
- 1/2 c lemon juice optional (I use the juice of 1 lemon)
- 6 bananas, peeled, sliced lengthwise then crosswise
- 1 bottle Prosecco Optional
Combine all ingredients in a large bowl. Carefully spoon into popsicle molds or cups. Freeze at least six hours, or ideally overnight.
Run mold under warm water to loosen the popsicle. Eat as is, or put in a glass of Prosecco for a delicious summer drink!
