Peanut Butter and Jelly Cookies
A few weeks ago my intern was in town for several days which was quite the Godsend. Not only did she help me in the early mornings with my early risers but she also helped me whip up some recipes for the blog. Not the least of which are these Peanut Butter and Jelly Cookies.
Peanut Butter and Jelly Cookies were not exactly what I was intending to make when I set out on a marathon baking day. I made the Chocolate Strawberry Tart which is made with a cookie crust. Then I wondered what the cookie crust would be like as a cookie. I made several versions of cookies with this dough. And, as you know, I’m currently obsessed with baking using strawberries now that I can get amazing fresh berries from our local farm.
So after multiple tarts, strawberry upside down cake attempts (more on that in the future) and batches of cookies, the most perfect cookie emerged from my oven. I know that peanut butter and jelly cookies are not my invention, but I do think I may have reinvented the wheel with this batch of cookies.
This is truly a perfect peanut butter cookie with the jelly inside perfectly set. Nobody likes that big glob of jelly that flows out of the PB&J sandwich when you take a bite and gets on your hands (I even got the shivers as I typed that right now). So I wanted the jelly to retain its jelly-ness and avoid that gooey cascade. The combo of the firm but still jelly center and the crispy texture of the PB cookie really is the best thing since…well, sliced bread. Let’s just say that, of the dozens of cookies my mom and I baked that day, these were the first cookies to disappear.
I hope that winter is finally fading away to Spring weather where you are, and the fresh local strawberries are finally available to you. If not, pick up some strawberry preserves and throw together these cookies. They may just trick your taste buds into thinking that Spring has arrived.
These Peanut Butter and Jelly Cookies take this classic flavor combination to the next level. The texture of the gooey jelly with the crisp cookie is absolute perfection. These cookies will not last long, so you might want to double the recipe.
- 1/2 c granulated sugar
- 1/2 c brown sugar
- 1/2 c butter
- 1/2 c peanut butter
- 1/2 t vanilla
- 1 egg
- 1 1/2 c flour
- 1/4 c strawberry preserves any flavor of preserves would be delicious
Stir sugars together. Blend in butter, peanut butter, vanilla and egg. Stir in flour to make a soft dough.
Roll dough into 1" diameter balls. Push thumb into the center of the cookie, careful not to flatten the cookie too much. The cookie should resemble a nest.
Bake until mostly done, about 7 minutes. Pull out the cookies and drop in about 1/2 t of preserves into the reservoir and bake 2-3 more minutes. Cool on a wire rack until the jelly is no longer hot.
