Chocolate Strawberry Tart
This Chocolate Strawberry Tart is bittersweet for me. Not the actual flavor, mind you – that is pure sweetness. But the memory of this recipe is bittersweet. I have a very vivid memory of visiting Granny one summer and she was so excited to make us Chocolate Chip Pizza. The bratty and ungrateful child in me would not eat it. As I’ve said several times, I grew up missing a sweet tooth, and desserts did not appeal to me (what kind of child doesn’t like desserts?). Lucky for me, Granny didn’t play favorites. Because if she did, I would have been fourth favorite (out of 4) because of my severely limited diet and because I was very short (Granny loved tall people).
I’ve always felt guilty about not trying this dessert that summer visit with Granny. Especially because now that I am my family’s head chef, I know how it feels when you make something for the kids, especially from scratch, and it goes uneaten and unappreciated. So when I found this recipe, I knew I wanted to make it to atone for my sin of dessert indifference.
Truth be told, I’ve made this twice. I made it a few months ago true to the recipe card, and last week, I made it again with a few changes. I switched out some of the marshmallows for strawberries. It is strawberry season in South Carolina, and our local farm store has the BEST strawberries. The result was AMAZING. The way the juicy strawberries mix with the gooey marshmallows took this pizza to the next level. Although my mom (intern) insists that now this should be called a chocolate strawberry tart and not a chocolate chip pizza. She is our official editor as well as intern, and she’s (almost always) right, so I’m going with her suggestion.
Call it what you will, this dessert is something that everyone should make this Strawberry Season! And I’ll be trying it with other seasonal fruits throughout the year. And from now on, the only guilt I will feel with regards to this chocolate strawberry tart is eating the whole thing by myself.
- 1/2 c granulated sugar
- 1/2 c brown sugar
- 1/2 c margarine or butter
- 1/2 c peanut butter
- 1/2 t vanilla
- 1 egg
- 1 1/2 c flour
- 1/4 c miniature marshmallows, halved
- 1/2 c chocolate chips, divided
- 12 fresh strawberries
Stir sugars together. Blend in butter, peanut butter, vanilla and egg. Stir in flour to make a soft dough. Add 1/4 c chocolate chips and mix together.
Press into 8" round cake pan. Bake for 10 minutes at 375 degrees.
Sprinkle with marshmallows and remaining chocolate chips. Bake for an additional 5-8 minutes until nicely browned.
Remove from the oven and decorate with halved strawberries while the tart is still warm.
This recipe will make 2 tarts.
