Double-Decker Knox Blox
Remember Jell-O Jigglers? Maybe you called them Knox Blox? They were something that I had completely forgotten about, but were a significant piece of my childhood. Recently I came across this recipe in Granny’s Recipe Box and thought they’d be perfect for Spring. Knox Blox were always a staple in our fridge, and a perfect little snack for little hands. I have such a fondness for the 90’s that I plan to bring back some things that made them great to me. Justin Timberlake already brought back Trolls and Nintendo was the biggest Christmas gift last year. I’ll take charge of bringing back Knox Blox.
I hadn’t thought about Jell-O or Knox Blox in at least 20 years, but I was so thrilled to see this recipe. At first I thought maybe it would be too basic to blog about. It is basically pouring boiling water or juice it into a bowl. But this particular post isn’t supposed to wow you with something new. It’s to remind you about these delightful little childhood treasures.
Because I thought these Knox Blox would be too basic, I complicated things for myself by making them a variety of ways. One with regular Jell-O packages, one with a new (at least to me) all natural Jell-O, and one with fruit Juice. Making them double-decker was very easy, you just add heavy cream. In fact, for one batch I accidentally used half and half and it looked and tasted exactly the same. Go figure!
Making this smorgasbord of Jell-O/Knox Blox was actually really fun. The second I opened the package of lemon Jell-O, I was immediately 6 years old and standing on a chair making these with my mom (back when I was her intern, instead of the other way around). I could even smell the rectangular Tupperware that we would pour the liquid into before popping it into the fridge. Seeing just how easy it was to make 3 separate batches of Jell-O Knox Blox, I plan to make these way more often. As a bonus, my toddler absolutely LOVED them. Especially when they were cut into fun shapes. They were all delicious, but I think my favorite were the Strawberry Lemonade Knox Blox made with the all natural Jell-O.
Now that I have kids, I sometimes wish I could go back to the 80s and 90s and have a re-do. I would have a whole new appreciation for all the work my mom did in and outside the house, spending summers with Granny, and playing outside all day completely carefree. These are things my kids won’t have the chance to really appreciate because the world has changed so much since I was a tot. But I’ll make darn sure they appreciate the heck out of some Jell-O Knox Blox. And next, I’ll be trying to bring back pogo-ball, skip it, and pogs.
A delicious and easy treat for all ages! Only 4 ingredients and endless fun!
- 3 Envelops Knox Gelatin
- 3 Pkgs Flavored Gelatin (like Jell-O) 3 ounce pkgs
- 1 Cup Heavy Cream
- 1.5 Cups Boiling Water
In large bowl, combine Knox with flavored gelatin. Add boiling water and stir until gelatin is completely dissolved. Stir in cream.
Pour into a shallow baking pan. Chill until firm. To serve, cut into 1 inch thick squares, or cut into shapes using cookie cutters.
Recommended pan size is 9"x9'
