Porcupines in a Skillet

Porcupines in a Skillet isn’t the fanciest or most beautiful meal you’ll ever make, but it might just be one of the easiest and cheapest. This easy, one-pot meal will be your new go-to! It's similar to stuffed peppers, even easier and can be made on the stove-top. And with such a cute name, kids might even try them!
- 1 lb ground beef
- 1/2 c raw rice
- 1 T minced onion
- 2 8 oz cans tomatoes
- 1 onion sliced
- 1 bell pepper, chopped
- Salt and Pepper to taste

Mix beef, rice, 1T onion and salt and pepper and form it into balls (about 1 1/2 inch).

Place in saucepan or casserole dish and cover with tomatoes, sliced onion, green pepper, salt and pepper

Cook (simmer) covered for 45 minutes. Or, bake in casserole for an hour at 300.
